Earth, Wind & Fuego, LLC is a woman owned business founded by Madeline & Jen in 2016. They committed their journey’s to health and healing and discovered that changing their lifestyle, including nutrition, supported their body in healing from chronic illness, dis-ease, surgery and medication.
Earth, Wind & Fuego incorporates all elements, not just flavor to nourish your body, mind & soul through our restaurant, catering, meal preparation, and wellness consulting services. As a social enterprise, we seek, build and sustain opportunities. We envision a community where everyone is able to live out their right to life, liberty and the pursuit of happiness and share their #poughtential with the world.

We believe our physical and mental health and nutrition are intrinsically inked. We use the highest-quality ingredients. Our produce is local and organic as much as a possible. We use grass-fed beef and organic chicken. No hormones or antibiotics. Our local maple bacon served at breakfast and the turkey bacon on our lunch sandwiches are always nitrate-free.
We are gluten-free, soy-free, refined sugar-free, and flavor-FULL! Yes, we offer vegan options.
Through our personal and professional consulting services we help others strengthen their self-compassion and self-care through our integrative model.
We support an ethical, just food system. We believe all people who contribute to nourishing us from food growers to dish washers are just as valuable as business owners. We support local farmers to strengthen the growing farm-to-table movement shifting away from the agribusiness industry. We partner with Hudson River Housing (HRH) as a host business for their Employment Assistance & Training Station (EATS) which helps HRH clients who face barriers to employment. With us they learn job skills, build confidence, create resumes and make connections for future employment. There’s no movement without all of us living up to our full #poughtential!
We honor the earth and care for our future by reducing waste that ends up in landfills. The U.S. Department of Agriculture estimates food waste in the United States to be about 30 to 40 percent of the food supply. Our food scraps are delivered to our local partner, Poughkeepsie Farm Project, for their compost pile to be repurposed for nourishing future food growth. Additionally, we work to reduce single-use plastics, utilize compostable products in our restaurant and catering services, and offer environmentally friendly options for meal preparation.
We are honored to be a part of the Poughkeepsie Underwear Factory community, bringing together food, art and community. We support our Middle Main partners by shopping local and support local farms. We hire local, city of Poughkeepsie residents as an investment back into the community.

Madeline Sabril Henriquez
Born and raised in Perth Amboy, NJ, Madeline was inspired by the many women in her life who made magic in the kitchen. A loud and proud Queer Dominican woman, Madeline was born feet-first and determined to change the world. Before incorporating Earth, Wind & Fuego, Madeline worked in human services for 13 years in different capacities, starting as an administrative assistant for a local not-for-profit social justice organization and advancing into managerial roles in health care reform, advocacy, reproductive health and justice, and gender violence. When Madeline’s chef hat comes off, she enjoys spending time with family, travel, listening to music while rearranging her home, and especially writing. She is a poet, adult romance & erotica writer, and comedienne and has shared her work at venues such as The Falcon, The Wherehouse, and 2 Alices Coffee Lounge. Madeline is a member of the Evolving Wordsmiths and has participated in the recitation of Poet Gold’s “Poughkeepsie Project, Poetically”(2016) at Barnes & Noble. Henriquez is currently working on a new comedy set titled “Mami raised me Catholic but I chose to be a nasty woman”.
Jen previously worked as the Sexual Assault Response Team Coordinator in Dutchess County before co-founding Earth, Wind & Fuego in 2017. She is currently pursuing her Masters in Social Work at Adelphi University. Jen has worked for and volunteered at human service agencies throughout Dutchess, Orange and Ulster counties and received the Asset Builder/Outstanding Youth Worker Award in 2015 from the Orange County Executive’s Youth Bureau Awards. She serves as a commission member of the Dutchess County Human Rights Commission and volunteers with Poughkeepsie O+ and Big Brothers Big Sisters of Orange County. As a poet and spoken word artist, Jen uses her writing and performance as a platform to shed light on systemic oppression and privilege, calling for unity among all people. She won the first ever Milkweed Poetry Slam in Sugar Loaf, NY, for her piece “Pulse” on the Orlando nightclub massacre.
